The difference is so pronounced that the USDA distinguished Beefalo as its own meat type, requiring a separate label or “roll stamp.” USDA testing found Beefalo to have about 66% fewer calories, nearly one-third less cholesterol, and 79% less fat than conventional beef, along with higher protein.
